Stumped over what to do with that watermelon sitting in your refrigerator? Got a tomato, onion, a few fresh herbs (cilantro, basil, parsley), and jalapeño? Quoting from Monte,
Purée the tomatoes and watermelon. Finely chop up the onion, herbs, and jalapeño pepper. Combine all ingredients, then add olive oil, balsamic vinegar and salt and pepper.

Servings: 2 quarts
Really nice served along side chicken, fish, or pork. Also can be used as a dip for crackers. You can also use fresh pineapple for this. The jalepenos are optional but if you like sweet and hot like I do add them you won't be sorry. This makes 2 quarts of salsa.

Servings: 3 cups
Another way to use fresh strawberries! Pretty and delicious!
2 cups diced strawberries
½ cup finely diced red onion
1 teaspoon sea salt, or to taste
1 tablespoon sugar
2 teaspoons white vinegar
Juice of one fresh lime
1 tablespoon jalapeño chili, seeds removed and finely minced, or to taste
¼ cup finely chopped cilantro
2 teaspoons finely chopped mint, optional
½ cup finely diced yellow bell pepper
