"I wanted a good canning recipe (and a safe one) for all the tomatillos I have in my garden, so after much searching I found this one. It is posted by Nancy Castleman on the Good Advice Press site under the name of Marc and Nancy's Salsa Verde, and I just moved it over here. Acid, such as vinegar or lemon juice must be
added to prevent the bacteria, Clostridium botulinum, from growing.

This recipe accompanies the Slow-Cooked Carnitas Tacos that I posted. This is also from the April 2008 issue of bon appetit magazine. This salsa comes together quickly and can be made two days ahead of time. As stated with the recipe, if you're pressed for time, there are several good prepared tomatillo salsas on the market. Extra salsa will keep, covered, int the refrigerator for up to a week. Mix with sour cream for a vegetable dip or add to chicken soup and garnish with strips of fried tortillas. -- posted by Happy Hippie

This sauce is delicious on all things grilled, especially salmon steaks, chicken thighs marinated in chiles and lime juice, and flank steak, rubbed with salt & pepper. A delicious green sauce from Northern Michoacan. This is really good over boiled rice (morisqueta) or fried cheese (Minguichi). I have used this sauce on tacos and enchiladas with good results also.
Yield varies depending on the size of your chiles and tomatillos. This recipe doubles easily and freezes well. -- posted by Alskann
